I am completely in love. This is like nothing I’ve tasted before, which is incredibly weird because the ingredients read: 100% coconut. And I love coconuts, anything coconut. Spread on toast, eat from the jar – the possibilities are endless, and I cannot wait to explore all of the possibilities. For months I’ve been wanting to make a jar of coconut butter and it’s finally sitting pretty in my cupboard. It’s so simple, too. Literally blend coconut flakes until smooth. It will leave you questioning why you’ve never done this before (presuming you have never done this before, but if you have, you are ahead of the game my friend, ahead of the game. You know exactly what kind of coconut tastes we’re talking about here. The downside is that this recipe (can I even call this a recipe?!) does come with a health warning. If you take the jar of coconut butter with you back to your comfortable armchair, spoon in-hand, know for sure you’ll find it near-impossible to return the jar back to the kitchen any where near as full as it was to begin with. It’s addictive.

You will need…
❄️ 150g unsweetened flaked/shredded coconut
How to make:
1) In a high-power blender or Vitamix, empty the flaked/shredded coconut, and hit blend! I used a Nutribullet and so after around 30 seconds of blending, the ‘whir’ changes sound slightly. When this happens, stop the blender and shake the container/use a spatula to dislodge the coconut for further blending. Repeat this until you start to get a smooth, buttery consistency that’s soft and inevitably genuinely tastes great.
2) Use a spoon/spatula to transfer to a jar with an airtight lid. The coconut butter will solidify as it sets so when you want to use it, submerge the jar 3/4 of the way in warm water to soften the butter, then you’re good to go! As mentioned, spread on toast, slather on dark chocolate, drizzle on fruit or eat from the jar!
