The second edition of the healthy meal ideas is this delicious stir-fry of wonderful vegetables. Dancing in a pan, cooking their way to optimum tastiness, the vegetables must have the motto: “aim to please”, because they definitely do!
You will need…
🌸 1 sweet red pepper, diced
🌸 1 courgette, sliced
🌸 3 spring onions, finely chopped
🌸 Walnut oil
🌸 1/2 tsp garlic purée
🌸 1/4 broccoli, cut into small florets
🌸 Packet of wet stir-fry noodles
🌸 1/2 small tin of sweetcorn
🌸Handful of button mushrooms
🌸 Soy sauce
How to make:
1) In a large wok or frying pan, on a medium to high heat, add a splash of walnut oil and leave to heat up for a few minutes.
2) Add all vegetables and garlic purée and let them cook for around 8 minutes, or until visibly cooked. If they start sticking, add a little more oil; stir constantly.
3) Stab the packet of noodles several times and microwave for 1 minute to soften. Add to the wok along with the sweetcorn, mushrooms and splashes of soy sauce, cook for a further 7 minutes until the everything’s cooked through.
