Kale and all ingredients come together to make a deliciously healthy pesto pasta — it’s so tasty! This dish is green and great and it can all be made in under half an hour. Half an hour and then present yourself with a healthy, homemade pesto pasta party…on a plate!
2 people (2 bowls) …with delicious leftovers
You will need…
🌸300g pasta, I used conchiglie (shell) pasta
🌸25g pine nuts and/or walnuts
🌸 40g parmesan cheese or try ground cashew nuts
🌸1 tbsp garlic purée
🌸 3 tbsp walnut oil
How to make:
1) Boil the kale in a large pan for 5 minutes, drain in a colander and rinse with cold water. Be sure to save the water the kale was boiled in for the pasta.
2) Add the pasta to the kale water and cook until al dente. While it is cooking, add the pine nuts/walnuts, parmesan, kale, garlic purée and oil to a food processor and blend to form the pesto. Depending on how thick/thin you want this to be, add water from the pasta pot accordingly.
3) Once the pasta is at desired softness, drain all water and add the pesto, stir, and leave on a low heat for a few minutes until it’s cooked through.
Transfer to dishes and add parmesan. It’s pasta made easy and it’s so quick to rustle up. You could even enjoy with a slice of fish, I bet salmon would be great. Options are endless!
