Sweet potato fish pie 

Making this pie was so quick and hassle-free and it tastes wonderful. The rich flavours mingle together to provide you with the ultimate satiating experience which feels so indulgent and satisfying!
Preparation time: 20 mins

Cooking time: 40 mins

Serves: 2-4 depending on servings

You will need…

🌸2 sweet potatoes

🌸Ready prepared fish from a sustainable source (one type or more, I used a packet with chunks of different fish (salmon, haddock and smoked haddock))

🌸2 large handfuls of spinach

🌸100g grated cheese, and a little more to sprinkle on top (both optional)

How to make:

Preheat oven to 190°C

1)Cut potatoes into quarters and add to a large pan of water. Bring to the boil and leave to simmer for 12 minutes.

2) In an oven-safe medium dish, add the cheese, spinach and fish chunks, and mix evenly.

3) When boiled, remove the potatoes from the heat and mash until they are soft and fluffy. Add on top of the pre-prepared fish base.

4) Hold back the cheese on top for now, add that half way through.

5) After 40 minutes the pie should be ready, look for a golden crispy texture on the potatoes and cheese.

This pie is surprisingly so simple yet so tasty and wholesome. I recommend broccoli and sweetcorn, or any other delicious vegetable; there’s even no need for gravy — just savour the wonderful flavours from your home-cooked fish pie!
